Crawfish pies are half-moons of pastry dough filled with a spicy etouffee mixture that are baked until golden brown. They are so good that they can be eaten hot out of the oven, at room temperature after they cool, or even cold out of the refrigerator-any temperature is the right temperature for a crawfish pie. Our pies can be easily packed for a picnic, eaten for breakfast with eggs, packed in a school lunch, eaten for supper. These pies are excellent for parties, wedding receptions, and all special occasions.
