Pickled Okra
3 pounds small okra, uncut 6 sprigs fresh dill or 3 teaspoons dried dill 6 cloves garlic 1/4 cup salt 4 cups vinegar 4 cups water
Rinse okra thoroughly. Pack into 6 hot sterilized jars. Place dill, and a clove of garlic in a jar. Heat salt, vinegar, and water to boiling in a large heavy saucepan. Simmer 10 minutes. Pour hot liquid over okra to within 1/8 inch of top. Seal jars immediately.
Cook in water bath for 15 minutes.
A water bath is having enough water to cover jars in a large cooker that will allow boiling.
Be careful when removing jars from boiling water!
Note: Pickled okra is a favorite in the South.
