Rocky Road Fudge

Microwave Rocky Road Fudge

    4-1/2 cups sifted confectioners sugar
    1/2 cup butter
    1/3 cup cocoa
    1/4 cup milk
    1/4 teaspoon salt
    1/2 cup chopped pecans
    1/2 cup miniature marshmallows
    1 teaspoon vanilla

Line an 8" square baking pan with aluminum foil, extending foil over 2 sides of pan; grease foil. In a large microwave-safe bowl, combine confectioners sugar, butter, cocoa, milk and salt.

Microwave on high power (100%) 2 to 2-1/2 minutes or until butter is melted. Add pecans, marshmallows, and vanilla; stir until well blended. Pour into prepared pan. Chill about 1 hour or until firm. Use ends of foil to lift candy from pan. Cut into 1” squares and store in an airtight container.

Yield: About 1-1/2 pounds fudge.
